Abuelas Chicken Soup
Hello everyone! Sorry for the delay in getting this out to you. Being a student isn’t very easy. But, I think I should be able to get this out to you quicker now, which is fantastic! My birthday just passed, and in honor of that I wanted to share with you all my Abuela’s (which is grandma in spanish) chicken soup.
Chicken soup is perfect for a cold day and you need something warm, or if you need something quick and good to make after you’re not feeling your best. This is the perfect recipe for someone who needs to feel at home.
Keep in mind this is a modern take on it using an instant pot. If you prefer to make it without an insta pot it will be the same instructions just on the stove, so you are free to go ahead and ignore the insta pot instructions. Also if you would like to go ahead and add noodles to make it a chicken noodle soup you can add that when you add the chicken broth.

Abuela’s Chicken Soup
Course: Lunch/ Dinner/ Appetizer Difficulty: Easy Time: 1 hr Servings: 8
Ingredients:
- 1/2 diced green pepper
- 2 chopped celery stalks
- 1/2 diced white onion
- 2 red potatoes diced into small cubes
- 2 tablespoons or to taste complete seasoning
- 2 32 oz chicken broth
- 1 chicken breast cut into small squares
- 1/2 tablespoon bijol condiment
- handful of green beans
- 2 tablespoons olive oil
Instructions:
- Turn insta pot on (or stove) and turn on saute setting. Drizzle with 2 tablespoons of olive oil.
- While that heats up make sure your onions, celery, and green peppers are diced and chopped. Once hot place those in until soft.
- Once hot place in chicken and cook until they are starting to white on all sides.
- add chopped potatoes and complete seasoning then stir
- add in chicken broth, green beans, and bijol condiment (and pasta if you’d like)
- stir and taste if needed either add some salt or more complete seasoning to taste
- Close lid with vent off and turn off saute setting, place on the soup setting high pressure for 30 minutes
- Once done let vent, open lid, and you can either serve like this or use a hand blender until everything is blended then serve.
