Colorful Shrimp Lettuce Wraps

Hello everyone! How was your holidays? I hope you all are staying safe and happy.

Today I’ve decided that I was in need of some color, as well as something light. So the shrimp lettuce wraps were born. These are great meals if you want something light and healthy but also tastes very good. They are also quite small and quick to make so if you want something to make that you can eat on the go this is perfect.

Now for many of my recipes I try to include a movie or tv series that you can watch while you eat. For this meal I watched Disneys Finding Nemo. My siblings wanted to watch it but I didn’t want to make fish,I felt that was a but odd, so I went with shrimp.

Colorful Shrimp Lettuce Wraps

Course: Entree Difficulty: Easy Time: 45 minutes Servings: 10 small wraps

Ingredients:

  • 1/4 cup of reduced sodium soy sauce
  • 3 tablespoons of lime juice
  • 2 tablespoons apricot preserves
  • 2 tablespoons water
  • 2 minced garlic cloves
  • 1/4 teaspoon ground ginger
  • 2 medium sized carrots
  • 5 green onions
  • olive oil
  • 1 pound of uncooked shrimp, peeled deveined and tails taken off
  • 1 chopped large sweet red pepper
  • 10 large lettuce leaves
  • (optional) cooked rice

Directions:

  1. In a small bowl mix together the soy sauce, lime juice, apricot preserves, water, minced garlic, and ground ginger.
  2. Using a vegetable peeler shave the carrots into thin strips. Chop green onions including the white parts, set aside.
  3. In a large skillet heat a few tablespoons of olive oil over medium heat. Add shrimp; cook until pink. Remove shrimp from pan.
  4. Add a drizzle of olive oil, stir fry red peppers and carrots for about 3-4 minutes, add the white parts of the green onions, stir fry for 2 minutes longer or until vegetables are tender.
  5. Add 1/3 cup of the soy sauce mixture to the pan. Bring to a boil, then add shrimp, cook until shrimp is cooked.
  6. Take a lettuce leaf, add shrimp mixture and drizzle with remaining soy sauce mixture. Pair with white rice.
  7. Enjoy!
