Hello everyone! How are you all doing? With the start of fall I wanted to hold on to the last bit of summer that I can. Thats when I got the idea to create a lemon themed dish.

Lemons are a staple in cooking. You don’t need a lot to go a long way. This makes for inexpensive, very tasty, ingredient. Lemons also make for a great alternative if you don’t want a very sweet treat, as they are more on the sour side.

These lemon bars make for great grab-and-go treats as they are the right size to hold in your hand. They have a great gooey filling that melts in your mouth and a great cheesecake-like crust that will make you sing.

Now I do want to be honest with you, and tell you whenever something goes wrong in my recipe to help prevent the same mistake from happening to you. When I had take the squares out of the oven my crust had sticker to the bottom of the pan. I believe that this was an issue with my appliance, as the pan I was using has done that to me now a few times.To avoid this problem I suggest adding plenty of non-stick cooking spray to the pan before you use it. I also suggest using a pan that you know is reliable and doesn’t normally cause that problem.

Besides the issue that I had with my pan, these treats were so good. They were very delicate and would make for the perfect treat for a bridal or baby shower. The bite-size aspect of them also make for the perfect picnic, lemonade stand, or bake sale treat.

Dreamy Lemon Squares

Course: Dessert Difficulty: Medium Time: 1hr 10 mins Servings: 15 squares

Ingredients:

• 1 cup/ 2 sticks melted unsalted butter
• 2 +1/2 cup granulated sugar
• 1/2 teaspoon salt
• 2 cups+ 6 tablespoons all purpose flour
• 6 large eggs
• 1 cup lemon juice
• powdered sugar for dusting Instructions:

Instructions
1. Preheat the oven to 325 degrees farianhait. Spray the pan with a nonstick cooking spray or line the bottom with parchment paper. Set aside.
2. Mix the unmelted butter, 1/2 cup of granulated sugar, and salt together in a medium sized bowl. Add 2 cups of all purpose flour and mix until combined.
3. Once the dough is thick press down into your pan, and spread so that the dough is nice and even.
4. Bake the crust in the oven for 20 minutes. The edges should be lightly browned.
5. Take out of the oven and set aside.
6. Sift the 2 cups of sugar, and 6 tablespoons of flour into a large bowl. Add in the eggs, and lemon juice, whisk until combined.
7. Pour filling over the crust. Bake in the oven for 22 minutes or until the center is set and no longer jiggles.
8. Remove and let cool completely at room temperature.
9. Once cool, cut into squares, plate, and dust the tops with powder sugar
10. enjoy!
